Kara Kuzhambu Recipe with step by step photos

Hello everybody, this is one of my favorite south indian gravy item. It is to be had with hot rice with appalam (pappad) and it tastes heavenly. I don't know what else to write about this dish. I hope you enjoy it.

Ingredients : 

Brinjal (small) = 3 cut into small pieces (could also add drumstick, ladyfinger)
Small onion = 15-20  sliced/ chopped (sambar onions)
Tomato = 1 finely chopped
Garlic = 10-15 finely crushed
Green chillie = 2 chopped roughly
Curry leaves = lil
Sambar powder = 2 tbs
Chilli powder = 1 tsp
Coriander powder = 1 tbs
Tamarind extract = 1 big lemon sized in 1 cup of water with lil salt
Turmeric powder = 1 tbs
Salt = as per taste
Oil = Preferably Gingelly Oil 2-3 tbs

To saute :
Mustard, jeera, fennel, fenugreek, urad dhal split

For the paste :
Coconut = 1/4 th of a coconut shredded or cut into pieces
Khus-khus = 1 tsp

Method :

Small onion chopped, garlic crushed and green chille
1 tomato chopped and some curry leaves
Brinjal cut and soaked in water as it gets oxidized and becomes dark just like an apple.
Heat oil  add saute it with mustard, jeera, saunf, fenugreek, urad dhal and curry leaves
Add garlic, green chille and onion and a pinch of salt and saute it well till the onion are cooked well
Add the chopped tomatoes and saute well
Once well cooked add the brinjal and cook it well
Grind the coconut and the khus khus and grind it to a fine paste. sorry forgot to take the pic of the paste.
Add the coconut paste to the brinjal and saute well
The tamarind in water with lil salt, you need to extract the pulp out of it.
Add the tamarind pulp/juice to the brinjal, add the masalas and salt and let it simmer for a 10 mins. You will see oil oozing out of the gravy by that time.
Garnish it with corrinader leaves and serve hot with rice and appalam
